This volume collects the results of the research activity carried out by IVALSA Research Institute from Florence on the features of Frantoiano di Montemurlo and other autochthonous olive varieties cultivated in Monteferrato Protected Area. The aim was to recognize the value of the oil obtained from them, both as far as production features, organoleptic features, and perfume-taste features are concerned. As further evidence of the continuous interest towards this territory and its ability to call the attention of researchers and experts in the field, in appendix there is a survey on the soil of Podere Paretaio olive grove, whose Frantoiano plants are the most interesting ones from an organoleptic point of view. The research study is a contribution given by the University of Florence - Earth Science Department, particularly important to discover the features of the soil that could influence the yield of the cultivar Frantoiano.
