Grissino stirato (Stretched Breadstick)

Definition
The ingredients of Grissino stirato (Ghersin stirà) are fine or superfine common wheat flour, water, leaven, and salt. According to some bakers, the traditional product should not include either animal nor vegetal fats (Bakers from Lanzo, Chisone, and Germanasca Valleys). According to others, the traditional stretched breadstick could also contain lard, or oil and lard (Bakers from Turin).
On the occasion of Grissino Stirato Festival held in Lanzo from 1st to 8th June 1986, the Municipalities of Torino, Chieri, Andezeno, and Lanzo T.se have signed an agreement among the historical breadstick production centers according to which "they committed themselves to its safeguard and qualification, as well as to organize initiatives and events promoting and enhancing the breadstick, in which they recognize part of their most authentic image" (Lanzo, 7th June 1986).

  • Production Area: Grissini stirati are traditional products of Valli di Lanzo, Turin, Canavese and Pinerolese areas.

  • Legislative Protection: Grissino stirato is classified among the "Traditional Agri-foodstuffs of Regione Piemonte", according to art. 8 of the Legislative Decree 30th April 1998, n. 173 and the Annex to the Decisions of the Regional Council 15th April 2002 n. 46-5823.
