Rice cultivation in the lands of Vercelli has led to the creation of an ecosystem favoring the proliferation of frogs that were caught to be eaten.
There were fishermen specialized in frog fishing who used to sell the product on the local markets. However, most of the product was used for the farmers' self-consumption.
In gastronomy, the Edible Frog is the most used. This frog has a green back with little black spots, while the belly is white or white-yellow. The legs are characterized by black-brown stripes, in many shades. An adult frog is about 10cm long. The meat, white, soft, and with a delicate taste, has a very low content of fats.
