Definition
Giora Salami is a salami with a fine-grained mixture, produced with meat coming from Piemontese breed cows that are no longer suitable for reproduction and fattened (giore, term after which the salami has been named). The meat is mixed with pork lard, salt, spices (white pepper, cinnamon, and nutmeg), sugar, and Barolo wine. Giora Salami is eaten only raw, after a few months of maturation, and is only produced from December to March.
