Gremola or gremola biscuit or dus d'la gremola, not to mistake with the corn-flour pastries (pasta di meliga), is a simple and dry pastry, with a flat and rectangular shape, exclusively produced in the town of Saluggia. The main ingredients are corn flour, sugar, butter (in the past also lard was used), fresh eggs, a bit of vanilla, and lemon peel. Gremole have an unmistakable taste: they are sweet, wrinkled, crunchy and soft at the same time (this is the main difference from corn-flour pastries, that are crunchy, but not soft).
