Definition
Saluzzo white hen has a medium-small size, medium developed head, with a well-developed red and upright crest in the rooster (with 4-6 "teeth"), bent on one side in the hen. Wattles and cheeks are red. Beak, tarsi, and skin are yellow. The plumage is entirely pearl white, with straw-yellow reflections on the neck and the back. The tail is while and high, slightly open in hens. The body is trapezoidal. The weight goes between the 1.9 and 2.4 kilos in roosters, between the 1.7 and 2.2 kilos in hens. The color of the eggshell is mainly white.
Saluzzo white hen can be bred both as chicken and as capon. It is ideal boiled or cooked "alla cacciatora".
