Ciuìga of Banale

An ancient "poor dish" telling the tale of the local farmers struggling to survive, today Ciuìga has been rediscovered as an excellent traditional taste. The characteristic ingredients of Ciuìga are turnips and a good quantity of pepper; together with beef and pork meat, they form the characteristic mixture of this sausage, which gets smoked with juniper branches.
Thanks to its exclusively local production, concentrating above all in the area of Banale, it has become a Slow Food Presidium. Excellent with sauerkrauts, polenta, and potatoes.
