Ariccia Porchetta is prepared with female pigs of selected national breeds and/or Landrace, Large White, and Pietrain breeds and respective hybrids, bred in Italy and/or in Community Countries. The size of porchetta goes from 30 to 40 kilos. The slice is compact and uniform, with the fat separated from the thin section. The rind is crunchy, golden, and has a sapid taste. Taste of pork meat flavored with rosemary, garlic, and black pepper.
