The volume is a collection of recipes using products deriving from
eco-compatible agriculture and breeding, coming from the protected
areas of Regione Toscana.
For each protected area, described by an
introductory text, there are about fifteen recipes among appetizers,
side dishes, first dishes, second courses, and desserts. An essential
"database of the gastronomic traditions" that cannot be replaced either
by time or by the fast food culture.
