The precious Chianina breed has very ancient origins. Its progenitors are the big white cows represented by the Eturscans and the Romans in their marches and sacrifices or in scenes of pastoral life.
Chianina breed cow is characterized by its very white mantle; some specimens reach a weight of over 10 quintals and they produce a top-quality meat.
Together with Marchigiana and Romagnola breeds they have obtained the "Vitellone Bianco dell'Appennino Centrale" PGI label with production specifications controlled by Consorzio delle Carni Bovine Italiane (CCBI) known as "5r". The receipt you receive in the butcher's shop contains the whole history and traceability of the butchered animal.
