Consorzio di Tutela dei Salumi di Calabria a DOP

Consorzio di Tutela dei Salumi di Calabria a DOP is a non-profit organization born on 8th January 2007 based in Cosenza, an administrative center of Calabria known since ancient times for its traditional cold cut products. According to what established by the national laws, the Consortium has obtained on 15th March 2007 the acknowledgement by Ministero delle Politiche Agricole Alimentari e Forestali (no. 586) and the relative task to carry out functions of safeguard, surveillance, and promotion of 4 PDO products (Protected Designation of Origin): Sausage of Calabria, Soppressata of Calabria, Capocollo of Calabria, and Pork Underbelly of Calabria.
They are exclusively produced with pork meat, and the pigs are mainly fed with barley, corn, chickpeas, and acorns, and they are marked with the quality logo "Suino allevato in Calabria" (Pig bred in Calabria).
To guarantee consumers, the whole process undergoes strict and accurate controls carried out under the surveillance of the Italian Ministry of Agriculture and Forestry and the certification body. We would like to found a temple of taste whose ritual should include selection, tradition, and the respect of the production processes. Since a taste becomes unique when it follows its path to quality.
