The Municipality of Piana Crixia is one of the main producers of White Truffle.
The
white truffle is spherical, with so many depressions on the rind which
make it irregular. Despite this, the external surface is smooth and
slightly velvety. The color varies from the pale ochre to dark cream,
and in some cases it becomes greenish. The pulp is unmistakable, white
and yellow-greyish with thin white venation. It has a pleasant aromatic
fragrance which is different from all the other species. It lives in
symbiosis with oaks, limetrees, poplars, and willows, and it rarely can
be found together with other truffles. The white truffle needs
particular ground and weather conditions to grow: the ground must be
soft and wet most of the year, and rich in calcium with a good
ventilation. All these features make the white truffle the rarest and
most precious species. The harvest goes from September to December.
