It is a cereal characterized by a high nutritional value. In particular, it has a high content of complex carbohydrates which are slowly metabolized by the human body.
- Processing Techniques: the product is cultivated according to a low environmental impact technique. As a matter of fact, the fields are managed according to the crop rotation system with barley, wheat, etc. Paddy rice (called "risone") is not processed very much, since the processing follows the traditional methods: stone rice bleaching and finishing at room temperature to preserve the rice organoleptic features intact.
