Prosciutto di Parma PDO

Another symbolic product of the Reserve's territory is the Prosciutto di Parma P.D.O.; its production area, especially in Val di Parma, is delimited by the river Enza to the east and by the stream Stirone to the west, then it extends 5 km south of the Via Emilia, stopping at an altitude lower than 900 meters. Here people pay a noteworthy attention to the maintenance of the crafted product's features (now threatened by the modern industrialization process of the agricultural-food products), which made it a must of Italy's food culture all over the world, and which represents the bent for a development combined with tradition that characterizes the whole Reserve. To produce the Prosciutto di Parma they use pork thighs having specific features established by the production rules, salt and the special climate of this production area.
