The Biroldo, a Slow Food Presidium, is a sausage made of pork meat and blood, flavored with a mixture of spices and fennel seeds, typical of the Garfagnana. The biroldo della Garfagnana is loaf-shaped, with a diameter of about 20 cm. It has a dark-red color, a quiet soft texture and an intense scent of spices and flavors. It is produced with pieces of pork meat mixed with its blood.
