Pancetta canusiana

The pancetta Canusina is a typical lunch meat of the Appennino Reggiano mountain community, where the pork culture introduce over thirteen centuries ago by the Lombards who came from Germany is still alive.
It is a salami produced only with pork's fresh belly butchered not more than 2 days before, then secret quantities of salt, sugars, spices and natural flavors are added.
