The dairy production tradition is another cornerstone of the history of
Massa. As in other Municipalities of Lattari Mountains (the name "Lattari" derives
from the great milk production), several small cheese factories still
produce cheese. In Massa, two cheese qualities are processed: they belong to the local products protected with the European Union label:
- treccia (fresh cheese with a stringy texture and the shape of a
twisted ring)
- caciocavallo (medium-matured pear-shaped cheese with a small head).
The name of the latter derives from
the fact that cheese (called caci) are tied in pairs at the head and
the maturation process takes place "a cavallo di un palo", that is astraddle a
pole; therefore, "cacio a cavallo".
