Zampetti

Zampetti are a traditional product of Lazio, mainly widespread in the Province of Rome. It is prepared with meat coming from the processing and cooking of the pig's foot. After the processing, the product gets cooled, salted, and sold; sometimes it is cut in small strips. Pig's feet are characterized by irregular strips (even if often the product is sold as a whole) and by a dark red color with white streaks. It has a rather sapid taste and in some cases it is possible to notice a lemon aroma. The weight of the end product is of approximately 10-20 grams. Its processing, documented in the municipal archives, usually takes place in winter and consists in the cooking and strong salting of the pig's feet.
