Torriglia Cake

Curiosities
"A bella de Turigia che tutti voean e nesciun piggia" (The beautiful lady from Torriglia: everyone wants her, but nobody wants to marry her): this saying, one of the most famous in Genoa and province, has historical roots. As a matter of fact, there was a certain Clementina di Torriglia who was the lover of Earl Lavagna Sinibaldo Fieschi, the local lord. Their illegitimate relationship resulted in Cornelio, who took part in the famous conspiracy against the Doria family in 1547.
Not beautiful, but without a doubt tasty and appreciated, the cake made with bitter almonds is, together with canestrelli, the specialty of this village of Trebbia Valley characterized by an ancient history going from the pre-Roman period to World War II.
For its natural beauties and cool climate, Torriglia is known as "little Switzerland".

Preparation
Ingredients: almonds, sugar, eggs, butter, flour, oranges, and vanilla.
Processing method: thinly grind the bitter almonds. Separate the yolk from the egg white, beat the yolks with sugar, add flour, orange, vanilla, and butter.
Mix the ingredients until you obtain a smooth but compact cream. Separately, beat the egg whites until stiff, and add them to the mixture.
Prepare a sheet of pasta dough where you can place the mixture. Put everything into a mold and then bake in the oven at 160°C for 25 minutes.
