It is a fresh cold cut to cook. It is produced with fresh meat, pork fat, and pork rind that are minced and dressed with salt and natural aromas. Saltpeter and vitamin C are also added. It is then put into the rind of the pig's trotter.
- Production Techniques: pigs coming from eco-compatible breeding activities, directly slaughtered and processed in the farm. The meat is processed according to traditional methods and the products are sold ready to be cooked or, in case of the precooked product, to be heated in the oven for about 30 minutes.
- Packaging: whole without packages, in bags, and/or vacuum-packed.
- Production Season: in the winter months and, on demand, all year round.
